Secale is a genus of the grass tribe Triticeae, which is related to barley (Hordeum) and wheat (Triticum). The genus includes the widely cultivated species “Secale cereale” which is grown as a grain and forage crop. Rye breads have become traditional in northern Europe because the grain is hardy, and baked products provide a wide range of nutrients and health benefits, and have a unique flavour profile.
