Rekord Instant Dry Yeast can be used in a wide variety of risen baked goods, including bread. Instant dry yeast is more granulated than active dry yeast, allowing it to absorb liquid quickly. Therefore no rehydration or proofing is required before being mixed into flour. This yeast will give you a fermentation increase of 30% to 40% compared to active dry yeast. Yet it weighs 3-4 times less than compressed yeast. It can also resist difficult climatic conditions so is perfect for use in locations unfavourable for fresh yeast.
